Bruce Auden
Bruce Auden, born in North London, has a classical background in the culinary arts. At the age of 17, he moved to Chicago where he worked for the award-winning restaurant Crickets, managed by the famed '21' of New York. After gaining a name for himself in Chicago, Auden launched his unique, innovative culinary style at restaurants in Dallas and Houston. Since 1985, San Antonio has been able to claim Bruce Auden as her own. After winning much national acclaim at Polo, the San Antonio Fairmount Hotel's restaurant, Bruce eventually opened Restaurant Biga in the Monte Vista neighborhood. The River Walk is now Biga on the Banks' new location, an exquisite and tantalizing experience for locals and tourists alike. Gourmet Magazine awarded Biga on the Banks 'one of the top five restaurants in Texas' in 2000, and Bruce Auden has been nominated for the James Beard Award of 'Best Chef Southwest' for the past four years.
