I have been reading about a collective called Veggie Mijas and I am genuinely impressed by how they connect plant-based living with food justice, decolonisation, and community care. You can find the site at https://veggiemijas.com/ . The collective is made up of women, trans, and gender non-conforming people who focus on creating welcoming spaces for BIPOC communities. What I found most interesting is the range of their work. They do not just share recipes or promote veganism as a personal choice. They run a community fridge in Chicago and free cooking workshops in Philadelphia to address food insecurity. They also published a bilingual children's book called "What Do You Need/¿Qué Necesitas?" which teaches mutual aid and equity through the stor…
